Juicy Coriander Garlic Chicken Drumsticks

This quick and easy dish is ideal for Light lunch or Supper.For speed, use the ready  mix available in most of today's super market and asian stores.Here I used Maggi juicy chicken corinader &garlic mix.

Ingredients:
Chicken leg pieces - 1 kg
Maggi Juicy chicken corinader &Garlic Mix - 2 tbsp or 1 pack.

Steps to Follow:

 Clean,wash and drain the chicken drumsticks.

 Put inside the zipper bag or cooking bag 1kg of chicken drumsticks and ready mix. Mix well.

 Preheat the oven to 200 degree maximum. Tranfer the mix coated chicken to the baking bowl.
 Keep it in the oven and cook for 45 minutes.


Now juicy coriander garlic chicken drumsticks are ready to serve.Carefully take it from the  oven to table.

For the salad:
Mixed salad leaves,sliced tomato,onion ,cucumber and olives. Just mix with thousand island dressing ready mix.Now the tasty salad is ready.


For Hummus:
one small can -  cooked chick peas
tahina paste - 2 tbsp
garlic cloves - 2
olive oil - 2 tbsp
salt - little.
Paste the above ingredients except oil and squeeze half  lime(optional) and then transfer to a bowl, pour olive oil over it and serve. That's all hummus is ready.


Serves - 4-6
Serve the juicy coriander garlic chicken drumsticks  with any type of bread, salads and  hamuus.

Pumpkin Kheer

Ingredients:
yellow pumpkin - 300 gm piece
thick milk - 2 cups 
sweetened condensed milk - 2 tbsp (optional)
sugar - 4-6 tbsp 
chopped nuts - almond,cashew,pistachio- each 1 tbsp
ghee - 1 tbsp
salt - pinch.

Serves -2 - 4
Maximum Cooking time -  30 minutes.

Remove the skin, wash and cut the pumpkin  into small size pieces.

 Pressure cook (2 whistles) the pumpkin pieces with half cup water and the same time boiled the milk.
 Cool it and paste the cooked pumpkin pieces with sugar in a food processor.


 Heat ghee in a vessel add chopped nuts fry till  golden brown.

 Add the cooked pumpkin sugar mixed paste.Mix Well.

Add 1-2 cups thick  milk. Depending upon the thickness you prefer.Stir well.Add pinch salt finally.

 Now the Delicious Pumpkin Kheer is ready .Serve warm or chilled in a bowl.

Boiled Egg Sandwich

Ingredients:
Left over bread slices - 2
green chutney - 2 tbsp
(to prepare green chutney, Add   half cup chopped mint leaves,half cup coriander leaves +2 green chillies,salt and lime juice to taste and grind it to paste)
Left over boiled egg - 1

Serves - 1

Steps to follow:
Cut the edges of bread slices.
Spread green chutney on both slices, cut the egg into half and place it.


Keep it in the sandwich maker for a minute.



Slice the sandwich into half and serve hot. Healthy  boiled egg sandwich is ready.

Homemade Rasam Powder & Dal Rasam




 Ingredients:
Rasam Powder:
pepper - 1 tbsp
cumin - 1 tbsp
coriander - 2 tbsp
splited bengal gram - 2 tbsp
fenugreek - 1 tsp
turmeric powder - 1tsp
asafoetida - 1 tsp
dried red chilli - 8
curry leaves - a fistful

Best Before 2 months to get good flavour.

Dry roast all the ingredients in low flame except turmeric powder and asafoetida powder.
Grind the roasted items and finally add turmeric and asafoetida powder,mix well.
Now the homemade rasam powder is ready.Let it cool and store it in an air tight container.

Dal Rasam:
toor dal - a fist ful
tamarind - small lemon size
tomato- 1
garlic - 2 cloves
turmeric powder - quarter tsp

To blend:
shallots - 2
garlic cloves -2
rasam powder - 1 tbsp
green chilli - 1
coriander  & curry leaves - few

For seasoning:
oil ghee mix - 1 tbsp
mustard -half tsp
dried red chilli -1
asafoetida- quarter tsp

Serves - 4 -6
Steps to Follow:
Soak the tamarind in a cup of water,extarct and keep aside. coarsely blend the 2 garlic cloves ,shallots,chilli, few curry and corainder leaves.Cook the dal along with tomato,turmeric powder and 2 garlic cloves  with one cup water in a pressure cooker.
In a vessel add tamarind extarct  and the blended mix .Let it boil for few minutes.Then add cooked dal along with water and salt to taste.Add enough water to your  taste.Mix well. Add few chopped coriander leaves.When starts to boil switch off the stove.
Heat oil ghee mix add mustard seeds, when it splutters add dried chilli and curry leaves and asafoetida powder  one by one.
Then add the seasonings  to dal rasam.
Now the tasty yummy dal rasam is ready to serve.

Paneer Tikka / Roll



Ingredients:
home made chappathi - 3
home made or store bought paneer - 150 gm
green capsicum - 1
tomato -1
onion - 1

Cut the paneer into 1 inch cubes  and also  cut the onion,capsicum,tomato (de-seeded) into same size chunks.
 For tikka marination :
fresh thick curd - 2 tbsp
chilli powder - half tsp
coriander powder - half tsp
garam masala, cumin powder - each quarter tsp
chaat masala - half tsp
tikka masala - 1tsp
dried kasoori methi - 1tsp
lemon juice - 1tsp (optional)
ginger garlic paste - 1 tsp (optional)
oil - 2 +2 tsp
salt - little to taste.
 mIx all the ingredients given in tikka marination.
 First dip all the paneer cubes and keep separately. Then mix capsicum,tomato,onion chunks.Marinate for one hour.
 Pre heat the grill to medium.Thread alternative pieces of marinated paneer,capsicum,tomato and onion to three skewers.
Brush the grill plate with oil and arrange the skewers and place on a grill rack and cook under a medium heat for 10-  15 minutes, until paneer cooked turning once.
 Now Paneer Tikka is ready to serve.

Serves- 3

 Remove the cooked paneer tikka and other veg chunks from skewer and roll it in chappathi, wrap and serve immediately.If you wish you can spread mint chutney in chappathi.
 Now Healthy Delicious Paneer Tikka Roll  is ready to serve.




 This is kadai version with same marination, really very tasty.
